He grows his own vegetables, produces his own olive oil, and even makes his own wine – all of which guests will enjoy when dining with him! Authentic Greek dining experience with Vasilis

What is your favourite childhood memory of food? What flavours take you back to that childhood memory?

The taste of pumpkin pie cooked by my mother on summer Sundays after returning from swimming in the sea nearby our family house in the northern part of Corfu. The fresh tomatoes from our kitchen garden. The peaches, pears and apricots from the trees surrounding our house.

What inspired your love of food?

Memories of my father cooking ‘skordalia’ (mashed potatoes with garlic) and fresh fried fish that we both had just caught.

What do you love most about hosting guests?

Good company, meeting new interesting people, sharing experiences. Sharing fresh local products cooked according to old Corfiot recipes.

What new flavours or cuisines are you hoping to try this year?

I am trying Vegan flavors from old Corfiot recipes.

Where in the world have you tasted the best food?

Fresh Madeira limpets by the sea.

What ingredient would you take with you to a deserted island?

Corfiot olive oil.

How has the social climate of the past two years affected you professionally?

The last two years were difficult for everyone, but fortunately staying and dinning outdoors in summer has helped us in Greece a lot to live an almost normal life.
