INGREDIENTS (MAKES 18/20 MADELEINES) A bit of softened butter for the mould
2 eggs
2 egg yolks
125 grams of white sugar
10 grams of high-quality honey (light in coulor)
120g of melted, lightly-salted butter
15g of vegetable oil (canola, sunflower, etc)
130g flour
4 grams of baking powder
The zest of half a lemon
Optional:
2 tbsp rose water
or
1 tbsp orange blossom syrup
or
melted chocolate
or
rose petals
or
sprinkles, etc.

Muffin tray (if you do not have a madeleine mould, you can use a muffin tray instead)
1 big bowl
1 pastry brush (if you don’t have one, you can use some crumpled up paper towel)
1 whisk
1 spatula
1 big spoon
1 kitchen scale (to weigh the ingredients)
1 cooling rack
1 cutting board
An oven to bake them in
A fridge to cool the batter
Optional: a cooking thermometer to know the exact temperature of the melted butter
PREPARATION before the class
Melt the butter and let it come to approx 35 degrees C
Preheat your oven to 210 C if it takes a really long time to heat up
