Trained in Copenhagen, Denmark my vision in the kitchen is of a modern and playful fusion combining my extensive travels and real world experiences! I am truly inspired by nature's colors and organic shapes and this translates into my plating style... Cooking and seeing people leave happy is my number one passion... I entertain with my wife Katerina who is a contemporary lighting artist. The space at SP408 is very relaxed with a tasteful style of modern-Industrial decor and walls full of eclectic art. My background is in  Hospitality Management and Culinary Studies. I am also a certified wine educator and my specialty is food and wine pairing. Strada Provinciale 408 or SP408 is the main crossroad in Tuscany. This is the state route that intersects Tuscany from many places. My pop up is called SP408 Laboratorio gastronomico, a place where I experiment with modernist techniques in culinary and a crossroads of sorts of all my life experiences and all that inspires me!
