Meet Maddine & Joe
New York artists, Maddine Insalaco and Joe Vinson, are risk taking urbaneers who moved to Manhattan’s Lower East Side in the mid 1990’s when the neighborhood showed none of the promise of the hipster Mecca that it has become today. Since then the couple have created a dream existence between their Manhattan loft, Brooklyn painting studio and home in Italy. A new migratory species, Maddine and Joe leave New York every spring for six months for Tuscany where they have run Etruscan Places, a landscape painting school since 1995. In 2002 they discovered to their delight that they had moved into the white truffle capital of central Italy. The proximity of the outstanding wines of Montalcino plus widespread artisanal production of olive oil, cheese, meats, etc. inspired Maddine to create Tuscan Epicure in 2004 (www.tuscanepicure.com). During the area’s annual white truffle festival the couple organize week long gastronomic tours featuring sommelier guided wine tastings, visits to boutique producers, truffle hunting, specialized dining, and cooking classes. Between the “plein air” painting and gastronomic classes, Maddine and Joe have been serving meals containing the highest quality inputs for over 20 years. This comes on top of an uninterrupted period of 10 years during which Maddine resided in Rome and learned to cook like a native thanks to her network of Italian friends and family. Maddine is half Italian. Her paternal grandparents emigrated from Sicily to New York in the early 20th century. Great food was part of her life from the beginning. Maddine and Joe have invented a life that is an inspiration to others and are happy to share their positive, creative energy at their table.

The evening was so enjoyable. Joe and Maddine prepared a delicious Sicilian dinner and graciously shared many of their Italian epicurean treasures...like personally handpicked and cured olives. What a treat! The atmosphere was warm and inviting on a cold winter night. The conversation - stimulating and lively. It was a wonderful evening.

Maddine and Joe provided us with a truly remarkable experience. The food was incredible (especially the olive oil and the ravioli), but even more memorable was the company. It was a great mix of people and it was a great introduction to the concept of EatWith.

This was a marvelous evening from start to finish. Maddine and Joe are great hosts, which is evident from the moment you enter their art filled apartment. The conversation was full and lively amongst people we had never met before. The food was just sublime! Delicate homemade tagliatelle with a pistachio pesto, and a hint of orange to start. Like nothing we have every had before. Followed by wonderfully delicious swordfish rolled around pine nuts, herbs, lemon, bay leaf, and other ingredients. That was served with a delicious swiss chard which complimented the fish. All of this was finished with a superb light cheese cake with a ginger crust and a wonderful sweet wine. Start to finish, five stars and authentic. Can't wait to come again.

Sharing the essense of Italy - uncomplicated but intensely flavored food with first rate ingredients - lively conversation, with eight vivid strangers and jolly, creative hosts was splendid. We were all so comfortable that we forgot the time. Maddine and Joe should have kicked us out an hour earlier. I wish Maddine would share her recipe for the best tomato sauce I have ever eaten, and I have eaten much of it having lived in Italy. The sweet potato gnocchi graced by sausage flavored with wild fennel smuggled in from Italy and the Mondrian fruit-topped panna cotta were super good. Thanks for a splendid dinner from a former caterer and longtime bakery owner.

Dinner with Maddine and Joe is always a culinary event. They can take even the simplest dishes and create it into something spectacular and special. The wines are paired with the food expertly. The company is wonderful and you leave the dinner with new friends. I would recommend a Eatwith dinner with Maddine and Joe to anyone who enjoys great food, wine and company!

Something truly special is happening at the dinner parties Maddine and Joe are hosting at their charming Lower East Side apartment. I felt I entered a Woody Allen scene (from his good old times... think Annie Hall or Hannah and Her Sisters). New York at its best. But, Maddine & Joe are all about Italy. They divide their time between Tuscany and Manhattan and are truly passionate about Italian food and culture. The food was well crafted, homey and delicious. I especially enjoyed the Involtini alla Siciliana - thin, rolled sirloin tips stuffed with pine nuts, raisins, cheese and just a sprinkle of breadcrumbs. Stewed in a light vegetable ragu. The wine pairing was just perfect and I appreciated all wine selections . Lastly, the atmosphere was so warm. Interesting conversation around the table and beautiful art, made by Joe, on the walls. I'm looking forward to be back at this table.

The meal was amazing. Maddine deeply understands Italian cooking, as only Italians do it in their own kitchen. Of course she adds her own international and LES flair to everything, from the sweet potato gnocchi to the meal's colorful palette. The food would be enough but Maddine and Joe's genuine joy in sharing their home and food is a pleasure in itself. Company was excellent.

The meal was amazing. The sweet potato gnocchi with wild fennel seeds and sausage was a touch of genius. Maddine is one of the best cooks that I know. She is the best mix of both worlds, Italy and New York City. She has a vast knowledge of Italian cuisine and uses only the finest of ingredients. They picked the wild fennel seeds in Italy and brought them back. Now if that is not dedication I don't know what is. The atmosphere was warm and welcoming and inviting and the company and conversation was outstanding. Joe is a wonderful host. I highly recommend this dinner. I would love to attend their Epicure tour in Tuscany.
