Wood fire oven stew (short rib, tomato, and morita dried pepper), empty “vol au vent”, à la mode vegetables.


Ancient mole sauce, grinded in the stone mortar (fig, ancho and guajillo chile, peppermint), charred vegetables, quelite herb. Spicy pea tamal.

- Light “Pozol”- Fermented cacao bean beverage from Pichucalco, Tabasco, and Mexican pure cane rum.


Aged pork rack, Coffee, honey and grapefruit, cured radish, manzano pepper and cilantro. Sourdough bread.

- Cold Brew coffee - from Guerrero and soda.


The Maria Waltz: Pairing between a desert and a waltz. Thyme Parfait and nougatine, strawberry and crumble, bitter caramel sauce, coffee and cinnamon génoise, pecan and cane juice praline, mamey, guava and peppermint.

What to expect

My friends and I traveled to CDMX for a culinary tour and this was without question the highlight! Every course was delectable and the gripping story behind each was captivating. It was multisensorial...educational...and importantly delicious! Everyone was warm...the space was gorgeous...and the orchestration perfect. We were impressed by Hectors fund of knowledge of Mexican history and gastronomy. Hector and his family have created a treasure that you should certainly experience
A truly unique and interesting dinner! One of the most creative meal experiences I've ever had! The food was 10 star delicious! All courses were matched to a continuing story that Hector created for us. While it was amazing food and uniquely tied to a story throughout the whole meal - it was all in Spanish. Unfortunately I am not fluent so I missed a lot of the nuances of the evening (Hector did provide translation at points throughout). So I recommend asking in advance it this particular meal is presented in other languages. Also, this dinner was quite far from where I was staying and it took 2 hours to get there. So check distances before booking. Other than that - this was a delicious and creative meal!
Fantastic experience ever! It was beyond any other experience. Hector and his team are just awesome people by their lovely service full of love and kindness! By far one of my best experiences not just In CDMX and México but if of my life! It’s more than eating and food it’s wonderful experience with unique dishes ever! Our dining experience with Hector and Lalo was absolutely magical! They have thoughtfully crafted each element of the experience and it really shows, from the decor, music, sensory experience, and incredible food! We have never experienced anything like this, and I highly recommend it! One of our favorite parts about our trip to Mexico City, and a can’t miss experience!
