About your host, Fiamma & Debora: "We are Debora and Fiamma, mother and daughter. We like to host guests in our house on the top of Gianicolo hill, with breathtaking views of Rome, and to share stories about our city, as well as anecdotes and cooking tips on the most delicious local recipes."

INGREDIENTS FOR 4 PORTIONS PASTA INGREDIENTS 1 egg 400 gr (14 oz) of flour: mix of white flour + semolina (alternatively, only all purpose white flour) 1 boiled medium size beetroot (alternatively, 50 gr / 2 oz of boiled and squeezed spinach) --> the beetroot has to become a pulp so if you don't have a mixer you need to use spinach
FOUR-CHEESE SAUCE INGREDIENTS 100 gr (3.5 oz) of Mascarpone cheese (alternatively, cream cheese) 50 gr (2 oz) of Parmigiano Reggiano cheese 100 gr (3.5 oz) of Brie cheese 100 gr (3.5 oz) of Blue cheese
KITCHEN TOOLS Board Fork Knife Rolling pin (alternatively, an empty bottle of wine, previously washed) Plastic wrap (alternatively, a metal or plastic bowl) Microwave (alternatively, a pot + a metal bowl) Mixer (no need if you're using spinach instead of beetroot)
What to expect
This was our first night in Rome and we could say easily this was a very unique experience. We were more than guests and felt like close friends. After this experience I can easily say that Rome is my favorite city in the Italy.
I had such a wonderful time cooking with Debora! She is not only a delightful host, but also a very skilled chef and teacher. She explained every step clearly and made everything fun. We chatted about cooking, Italy, family, dogs, music and other subjects as she taught me how to prepare farfalle with a delicious sauce. I will definitely be looking for more classes with her - and, hopefully, will be able to join in person next time we are in Italy.
Fiamma & Debora were fantastic hosts and so welcoming. It was a great experience for our family to learn about making pasta and tiramisu. Highly recommend for anyone spending time in Rome to get an authentic experience from this wonderful mother/daughter team.
