Paired with either a very aromatic or slightly sweet white to balance a bit of chilli and sweetness in the dish.
e.g. Sauvignon, Pinot Gris or Gewurztraminer.
Paired with a med-full body white. Not oak aged, but has some weight and high acidity.
e.g. Quality Italian grape like Falanghina or Fiano; or a classic Chablis
Paired with an oak aged white - the richer the better.
e.g. New World Chenin or Chardonnay.
Paired with a red, ideally from Spain with intensity, heat and smokiness.
e.g. Bierzo or Toro; or Aussie Grenache.
Paired with a fruit friendly red, light to medium body, but with flavour intensity.
e.g. a good Pinot or lighter Shiraz/Syrah.
Paired with a medium sweet dessert wine
e.g. Sauternes or equivalent sweetness.
