An autumn recipe typical of the Apulian peasant cuisine. The variety of olives used for this recipe are the "sweet olives" brought directly from Puglia. They begin to ripen in early September and are distinguished by their dark color and bitter taste. They are fried when they are ripe, in cooking they give off an irresistible aroma, a unique taste and flavor.
It is one of the most loved products of Puglia. It belongs to a tradition handed down from mother to daughter and for this reason Marisa guards its secret to make the dough unique and inimitable.
Also called acquasale, it is a typical dish of the rural tradition and is prepared especially in Puglia and Basilicata. It is prepared with fresh ingredients: tomatoes, cucumbers, red onion. It is then enriched with pieces of stale bread or with chopped friselle (typical dry bread brought directly from Puglia), as in our recipe.
With potatoes, tuna in oil, mayonnaise, capers and pickled gherkins.
It is a typical Apulian recipe. It is prepared using decorticated dried beans. The broad beans are rich in proteins, iron, folic acid and vegetable fibers and absolutely low in fat. It comes in many ways…. This time we will propose them with croutons and red onion rings, seasoned with extra virgin olive oil brought from Puglia.
It is a delicious meat dish, rich in taste and flavor, which literally melts in your mouth, cooked in the "terracotta piglet", which enhances the flavors, will be served with potatoes cooked in the same container.
