For us Tuscans, summer represents not only holidays and the sea, but the beginning of the threshing period, a moment in the working life of a very tiring but also satisfied farmer. The wheat is now ripe, its unmistakable gold color makes it ready to be threshed, to become flour which in turn will become bread and pasta.
