A word about the experience
Dive into the making of a simple, classic brioche under my expert guidance. Create with the basic brioche recipe an indulgent chocolate babka (a New York City favorite), a tarte au sucre, and a brioche Suisse. Not to worry, you will be producing all of these with my constant help, support and feedback. I will also give you tips and ideas for other flavors as well. And, of course, you get to bring home everything you make! I grew up in Lyon (France), a city that is blessed with produce of unequaled freshness and a reputation for being at the epicenter of French gastronomy. Currently, I live south of Toulouse (France) near the Pyrenees. Prior to that, for 30 years, I lived in London (UK) and in Rochester (UK) where I owned the (semi)legendary patisserie and coffee shop, Bruno's Bakes & Coffee. In 2011, I won a Master Chef Live/BBC Good Food Show bursary award for my salted butter caramel and my sweet pastry tart base. I was also a judge for the semi-final of the International Chocolate Awards held in London in May 2012. I was featured in the January 2013 issue of Delicious magazine and the May 2014 edition of Kent Life. Some of my recipes can be found in the DK book, "Chocolate: Indulge Your Inner Chocoholic". The workshop will take place at Ferme de Lissac, 40 minutes south of Toulouse. Its rustic kitchen is spacious with plenty of space to watch and learn about brioche. The farmhouse is set in a small valley with rolling hills epitomising the flavor of southwestern France. It's a most relaxing setting to learn as we are surrounded by beautiful nature. A 5 minute walk up the nearby hill will reveal a stunning vista of the Pyrenees
