Walk around the vegetable garden, discover what is available for the season, grab few herbs. 
Back in the house, all together we start to prepare our lunch, sipping the welcome aperitif.
Once at the table we will share our stories, talk about the recipes, jokes and enjoying the local organic wine.

Roberta and her Husband Jim, have worked in the food industry their entire carrier.
She has a degree in art and design but always had a passion for cooking since she was a child. Once she moved to America, It was her first thanksgiving, bringing her dish to an Italian family and restaurant owners, that she was introduce to that world of the restaurant life. Finally she was able to free her creativity and learn all the steps and departments the restaurant has. It was in that restaurant where she met her now husband and co-host, together became a perfect combination, one apply the passion and creativity and the other one knows how technically execute it.
Both they share the same love of the countryside, have skills in landscaping, home restoration projects and wood working.

Cooking class-lunch at our home in the countryside

Grilled eggplant and zucchini, roasted bell peppers, all marinated wrapped around fresh cheese. Served with Homemade Focaccia. 

Gnudi are a wonderful dish of Tuscan cuisine, made of a few simple ingredients: practically the stuffing of the Maremma tortelli without the wrapping of the pasta that protects them, hence the name "Gnudi", which in Tuscan means naked. They are made with products always at hand in the peasant culture: spinach, daily eggs, fresh ricotta cheese, parmesan or pecorino cheese.
Gnudi are served with a marinara sauce and shaved parmesan cheese.
