Learn how to bake classic French Madeleines, a traditional shell-shaped cake. Gitanjali will teach you all the secrets of this traditional dessert and how to make perfect Madeleines every time!	

What to expect:	

• You'll also get ideas on how to customize the recipe and make many unique versions of madeleines that will wow your friends and family	
• Gitanjali will demonstrate the process step by step and will provide personalized baking tips	
• At the end, you'll get to see different ways of decorating them, from dipping them in chocolate to sprinkling them with rose petals!	
• Gitanjali went to culinary school, has a wine certification, and is extremely passionate about good food, great wine, and fail-proof recipes	

What you need to know:	

• It is not essential to have a madeleine mould to take part in this online experience, you can use a muffin tray instead
• This online experience is perfect for groups of friends, families, team-building events and end of year office parties

Master the art of baking French Madeleines

A bit of softened butter for the mould

2 eggs

2 egg yolks

125 grams of white sugar

10 grams of high-quality honey (light in coulor)

120g of melted, lightly-salted butter

15g of vegetable oil (canola, sunflower, etc)

130g flour

4 grams of baking powder

The zest of half a lemon


Optional:

2 tbsp rose water

or

1 tbsp orange blossom syrup

or

melted chocolate

or 

rose petals

or 

sprinkles, etc.

INGREDIENTS (MAKES 18/20 MADELEINES)

1 madeleine mould (this is recommended but it's not essential to have)

Muffin tray (if you do not have a madeleine mould, you can use a muffin tray instead)

1 big bowl

1 pastry brush (if you don’t have one, you can use some crumpled up paper towel)

1 whisk

1 spatula

1 big spoon

1 kitchen scale (to weigh the ingredients)

1 cooling rack

1 cutting board

An oven to bake them in 

A fridge to cool the batter

Optional: a cooking thermometer to know the exact temperature of the melted butter

KITCHEN TOOLS

Melt the butter and let it come to approx 35 degrees C 

Preheat your oven to 210 C if it takes a really long time to heat up

I did my culinary training at the famous cooking school Ferrandi Paris, as well as the WSET wine and spirits certification (Level 2 with merit).

I’m currently a freelance food content creator (for myself: @gitanjaliroche on Instagram, and for private clients), as well as the C.O.O. of Opnkitchen. 

I’m specialized in digital content, and work in various domains, from recipe development to recipe translation, to community management, and everything in between!

Born in the United States to an Indian father and Syrian/Armenian mother, I moved to Greece when I was 8 years old, and then to France when I was 23. I’ve also lived in Utrecht (the Netherlands), and recently moved to Fontainebleau, a beautiful town in the middle of France’s largest forest, after living in Paris for 10 years.

My passion is learning about the history and culture of various recipes and cuisines from around the world, as well as recommending amazing restaurants, passionate chefs, and delicious recipes to everyone around me!
