Discover all the tips and tricks to make the perfect paella and share this fun and relaxed interactive online cooking class with your partner, family and friends. Ingredients for Paella (4 portions)
500gr Bomba Rice or Arborio or Carnaroli 1/2 red pepper 1/2 green pepper Parsley 1 Ripe tomato or a can of fresh tomato sauce 1 sweet onion 1 garlic clove EVO oil Salt 1gr Saffron 2 tbsp Pimentòn 300gr Monkfish 250gr mussels 250gr squid 4 shrimps for a total of at least 200gr 4 scampi

A 28cm frying pan - ideally none stick Oven 3lt pot
Preperation before the class
Prepare the stock for the paella a few hours before the class or the day before and refrigerate
3lts water 1 tbsp salt 1 garlic clove 1 Onion 1 Celery Stalk 1 carrot 500gr Bones of fatty fish as salmon or monkfish. If not available, buy 5 extra shrimp and use the heads, keep the tail for the paella
Pre-heat the oven at 200C, roast the bones or the shrimp's head for 10 minutes.
Bring the water to a boil over medium heat
Roughly chop the carrot, the garlic clove and the celery, add to the water
Add the fish bones or shrimp's heads to the water
Add salt
Once the water is boiling, turn the heat to low, put the lid on and let parboil for 2 hours
