Chana Masala (Chickpeas in Masala Base)

Ingredients
2 cups cooked chickpeas (or one 16oz can)
1 tablespoon grated Ginger or 1 tsp ginger powder
1/2 cup finely chopped red onion
2 tablespoons tomato paste
3 tablespoon cooking oil
1 teaspoon cumin seeds
1 teaspoon turmeric powder
1 teaspoon garam masala powder
1/2 teaspoon red chilli powder
1/2 teaspoon black pepper powder
1-2 bay leaf
Cilantro leaves for garnish
Salt, to taste

Tools needed - Wok/pan with lid, large spatula

Butter Garlic Naan
Indian flatbread
Ingredients
1 ½ cup All purpose flour
1/4 tsp baking soda
1 tsp baking powder
1 tsp salt
1 ½ tbsp oil or ghee
¼ cup plain yogurt
1 ½ tsp garlic (crushed)
water, for kneading
2 teaspoon Nigella seeds/Onion seeds
1 tbsp salted butter melted
1 tbsp cilantro, finely chopped

Tools - Flat base pan, mixing bowl, rolling pin and board

Tomato-Onion Raita (Yogurt dip)
2 cups plain Greek yogurt
½ cup finely chopped tomato
½ cup finely chopped red onion
1 green chili/jalapeno
1/2 teaspoon cumin powder
Mint leaves or cilantro leaves (optional)
