Tarte flambée “Flammekueche”, a pizza-like dish with bread dough rolled out very thinly in the shape of a rectangle or oval, which is covered with cream (crème fraîche), oignons, and thin sliced bacon (lardons)

The gastronomical symbol of the region : Choucroute garnie , which is Alsatian sauerkraut with sausage (Frankfurter) and other salted meats (mostly pork) as well as steamed potatoes. To make the alsatian sauerkraut, cabbage is finely schredded, layered with salt and juniper and left to fermet in wooden barrels.

Like the rest of France, Strasbourg cannot be without its cheeses. Among Alsatian cheeses you can taste Munster or Bibeleskas, a preparation made of white cheese, garlic, chives and parsley, served with both boiled and fried potatoes.

Pain d’épices or Gingerbread refers to a broad category of baked goods, typically flavored with ginger, cloves, nutmeg or cinnamon and sweetened with honey, suger or molasses.
Pain d’épices is mostly eaten during winter times, especially during the Christmas market.
