First Course: Elote
The first time eating, ‘Mexican Street Corn’ was from a questionable food truck with two co-workers, who became best friends of mine.
No need to reinvent the wheel. We roast 1/2 of the corn, sauté the remainder in butter with bold Creole spices, and we serve the elote with freshly cut cilantro, shaved Parmesan cheese, lemon wedge, and sprinkled with crushed Doritos.
Course 2: Saka-Saka
During the winter months, my elders would prepare a ‘Root’ (a fermented beverage), similar to an immunity boast shoot. These mixtures are great for detoxing.
The base of this dish is papaya, and mangoes alongside freshly squeezed orange juice, African spices, a dash of Olive Oil, and chopped mint finishes this great gazpacho.
Course 3: Jambalaya VS Paella
The greatest debate, especially around the kitchen, is your preference: short or long grain rice?
This main course starts with the holy trinity sautéed then jasmine rice cooked in a homemade broth until the creates a crunchy base making the perfect base to top fresh seafood and shredded roasted duck.
course 4: Chopped salad
Growing up, I always admired my sister for deciding in High School, to become a Vegetarian. She was the inspiration for this course.
The base of this salad consists of, minced kale, topped with an assortment of accouterments, tossed in a homemade tamarind vinaigrette, topped with fried mustard greens toasted sesame seeds, and homemade croutons.
course 5: Dalgona
What’s starting your morning without a brew? No, we aren’t talking about a shot of espresso!
We whisk ground Cuban coffee beans, sugar in the raw, a splash of vanilla extract, a tablespoon of warm Scotch, whipped until frothy, and then serve the foam over iced-chilled milk.
course 6: 24 Karat
Bruno Mars, is not included.
A creamy-velvety & smooth vanilla custard, served on top of shortbread crumble, a dollop of bourbon whip cream, with a banana foster sauce, accompanied with shaved chocolate, caramel pieces, and as if that wasn’t ‘extra’ enough, we sprinkle gold flakes over the dessert.
