Chef Courtney teaches you how to cook with “self-possession”—in other words, don’t just follow recipes, understand how to build flavor and create texture with any basket of ingredients. 

Chef Courtney was an instructor at the Chef Studio, the lauded cooking school of her late mentor Robert Reynolds.  You will learn not only from Chef Courtney’s experience as chef/owner of Din Din, but from Chef Reynold’s years of study with celebrated French chef Madeline Kamman.

We will:
Sit to review what we’ll be cooking
Cook each dish hands-on in teams, including group-wide demonstrations of each key element
Sit to taste what we cooked, discussing what we learned

din din is a restaurant project in NYC that is an evolution of Chef Courtney Sproule’s Portland, OR restaurant of the same name.  A two-time winner of Portland Monthly’s Best Restaurant, “groundbreaking” din din was credited with “reimagining the Portland restaurant.”  Now in NYC, din din hosts a monthly Bed-Stuy dinner series and recently held a spring/summer residency in Williamsburg and the Lower East Side.

James Beard Award-winning food critic Karen Brooks perhaps best described din din, saying, “If Julia Child had joined the riot grrrl movement, America’s food revolution might have looked like Din Din.” 

Courtney’s dishes nod to regional French cuisine, with aggressive flavors presented with a modern and feminine hand and conscientiously sourced ingredients.  What she loves about hosting is sharing the beauty of the table with guests.  Courtney cooks to impart what was taught to her by her mentor Chef Robert Reynolds about a French meal: the harmony of a menu written with a sense of place, the grace of an arched meal designed to gently land you on your feet, and the joy of spending time with your loved ones over a leisurely gathering.  Servers deliver ceremonious steps of service and an every-detail-considered hosting style that is welcoming, fun, and sincere. 

In addition to teaching regional French cuisine at the Chef Studio, the lauded cooking school of Chef Reynolds, Courtney’s culinary foundation was built working under James Beard Award-Winning Chefs Vitaly Paley at Paley’s Place and Naomi Pomeroy at BEAST. She served on the board of the Hollywood Farmers Market, Portland’s oldest farmers market. Courtney’s extensive event coordination experience brings a uniquely rounded perspective to her work, having produced highly stylized, 1,000+ guest events for the International Association of Culinary Professionals, film company LAIKA, and Stumptown Coffee Roasters.
