Fergus spent the majority of his life as a passionate home chef, until his late 20's when stepped into a professional kitchen for the first time. He quickly got hooked on the buzz of a busy service, but also to need to explore and experiment far more then what is practical in a typical restaurant. Toward the end of 2019 he decided do induce his own baptism of fire, by launching a supper club serving a taster menu of experimental dishes in his home town. Alkemio is actually the Esperanto spelling for alchemy, Esperanto was a language that was constructed out of the world's languages and had no real home. Fergus aims to take inspiration from cuisine across the world, combining ingredients, flavour profiles and formats in ways you have not seen before, all the while elevating each dish with technique and presentation to make it unforgettable!

It was really nice experience and venue. The rest just went wrong. The worst part is that both of us were sick the next day.

The food was really interesting and there were some delicious dishes and elements. The noise level in the venue was so extreme that we left after the main course, with two courses still to go. it was 10.30 by then and the event had started 20 minutes late. you could see the crew were begining to tire and the main course took over half an hour to come from the course before being cleared. It's a fun venue but difficult for the chef and crew.

It’s an amazing dinner and will do it all over again. All courses were super creative, hearty and tasty. Sauces Fergus used to pair with the dishes were even more surprising and creative. I love how we all try to guess what’s in that jammy sweet sauce. Well done Fergus and team. Thanks for a lovely night. Look forward to hearing about the food and wine pair event ;)
