Being French, the selection of ingredients is the most of important thing to decide on the menu.The explosion of flavours and taste in food can only be achieved with good ingredients and so must be seasonal and ideally organic. And one vital ingredient is the love you put in preparing the food and that I always spread as much as possible on each plate I serve!
