The tasting menu will begin with a greeting from our host McKenzie, a glass of sangria, and a sophisticated table set with Brined and Roasted Rosemary-Chile Almonds & Candied Peppered Walnuts. The first plate will consist of a classic Italian Mushroom Risotto topped with a nest of sautéed mushrooms and shaved parmesan. Next, we will enjoy a Middle Eastern plate of Lamb Kofte served with Hummus, Muhammara, and a wedge of pita. The menu takes a spicy turn from here so we will serve a short citrus sorbet intermezzo, and our host will prepare a traditional Cuban Mojito with fresh lime and muddled mint. The mojito pairs quite well with the Vietnamese Pork Banh Mi that is served next. The Banh Mi is presented on a French baguette and stuffed with pickled carrots and peppers, fresh herbs, and sprouts. The final dish is Cajun-inspired Fried Shrimp served on a plate of pepper jelly and topped with pickled red onion and fresh fried herbs, and is as visually appealing as it is delicious. Finally, we will serve a glass of Summer Corn Gelato which is studded with a shard of Jalapeno Glass, a dessert that can be found nowhere else and could not possibly disappoint.
This menu reflects much of where we have travelled as well as the flavors and textures we find most appealing. When booked, this menu can be expected, however I always like to test new dishes when I have a chance, and you may find an interesting addition or two.
