One Christmas, I spent in Florence. Like on so many of my trips, an Italian friend showed me a traditional dish. That cold winter I learned to make lasagna al forno. Many Italian friends (and their mothers) have made me this with me dish since. It is always at once a comfort food and a decadent treat. Learn to make all the components to this stand out of northern Italian cuisine. We will start by making the rich bolognese. While the sauce simmers we will hand make our own pasta. We will make both hand rolled and machine rolled pasta. We will then move on to the bechamel, taking time to make the perfect creamy sauce. I will discuss techniques as well as ingredients. We will all share in the fruits of our labor with a nice lasagna dinner, wine, homemade warm bread, salad, and, of course, wine. Students will go home with a jar of bolognese and a loaf of bread. All supplies are included.
