Come give your taste buds an adventure! I LOVE taking people out of their comfort zone (not too much) by introducing them to food they normally would not see on a menu in a restaurant and expanding their food horizon that much further. Each of the dishes on this menu are Farm-to-Table and locally sourced (Houston). When I cook these dishes I put a touch of Southern Comfort mixed with French and Italian Techniques to get the best taste/texture contrast.

Homemade Bread accompanied with Cooked Bone marrow and Butters from Texas's Dairy Farms
Tomato-Based Soup cooked with tripe
Fresh calf liver cooked and Caramelized with a sugar/berry mixture
Oxtails braised in a homemade 10 hour homemade marinara sauce accompanied with pasta and Broccoli
