'Zard' and 'Sabze'. Yellow & Green. Iran (Persia) is an ever green country. It reflects very much in it's food: lots of greens, dill, parsley, coriander, tarragon, spring onions, basil, leek, board bean(ful), green peas and much more. 'Zard', Yellow , is the color of the very dominant spice in the Persian cuisine: the Turmeric. Persians take pride of a very rich culture enhanced by an extraordinary food with unique flavors: Pomegranates, Rose Water, Figs, Orange zest, the famous Dried Persian Lemon, Fenugreek& Curry, pistachios, Almonds and Pine Nuts, Berries and Cherries, of corse the Turmeric& Cumin and much more. As someone who was born in the Middle East and has several Persians in the family, I grew to love this wonderful cuisine. It is all about a multitude of colors and Scents.

Crispy golden chicken with yellow chick peas, garlic and lots of dill lightly fried and cooked in white wine. Served with traditional 'potatoes on top of rice' dish, with saffron, cumin and turmeric, garnished with broad bean and dill . Roasted pickled aubergines in Curry
A Persian drink/dessert of rose water, angle hair noodles and berries/cherries/chia with grenadine. Persian 'scones' with nigella seeds topped with fruit Sharbat.
