Take a journey with me through the Croatian South (we will do the North some other time!). The sun is high and we will start by slowing down and cooling down, a lazy mid-day bite in the shade of the fisherman's house. We will then engage with one of the most elegant cooking techniques and deliciously messy dishes of the Adriatic (Buzara). Then the main dish that will forever change your view of what is possible to do with with so little. Then we land with something that it almost (but not quite) as good as sex after the beach. MARINATED BLUE FISH
Roasted fresh sardines immersed in a heated herb marinade, then cooled overnight. Served with warm multigrain ciabatta and those lil' important Dalmatian things on the side. Red wine to rinse the sea and olive oil. Adriatic reverie.
