This four course menu is a compliment to A Taste of Trinidad, and highlights a few more of the classic Trinbagonian (Trinidadian and Tobagonian) dishes I grew up eating. Our food is truly a melting pot of flavors! With the history of immigrants blending with the native population you can find the influences from many cultures. African, Chinese, and Indian culinary traditions are quite prominent but there are so many more. So pull up a seat at my table for a flavorful feast.
A blend of tropical fruit juices with Angostura Rum (5 Year) from Trinidad And Tobago
Two mini bara (fried flat bread) topped with curry channa (chickpeas), tamarind and chadon beni sauce, cucumber, and pepper sauce
Curry Crab and Dumpling
Seasoned crab meat in a traditional curry sauce over dumplings
Chicken thighs browned and cooked with fresh herbs, garlic, tomato, ginger, pimento, and hot peppers.
Kidney beans cooked with garlic, thyme, ginger, onions and carrots.
Spinach or dasheen (dependent on availability), okra, carrot, green seasoning and fresh herbs simmered in coconut milk.
