It starts with a typical plate called 'papa á la Huancaïna' with contains salad, patato, eggs and a sauce only known here made with special (yellow) peppers and herbs.
The Main plate is is called 'Pacha manca', witch contains 3 kinds of meat, vegetables and 2 types of patatos (normal and sweet). It is stoved all together in a liquid witch contains 4 types of herbs and a liquer called 'chicha'. This is the most typical plate to be served in Perú. It used to be stoved in a stone oven, but we use a very large pan. But stoved on wood.
Desert is simple. Just a flan, a sweet quinua plate or mazamorra, a cream made from black corn.
