TBC was started by baker and ex-industrial designer Julia Georgallis for practical, spiritual and digestive purposes… and to spread the word of loaf. This moving, micro bakery travels around with a portable wood fired oven running bread making classes, supper clubs that teach us something about new ingredients and writing blogs about their various global travels. Julia is a Londoner with a weakness for baked goods who worked as an industrial designer for four years. A few years ago, she swapped her design job for an apron and learnt how to bake bread. She has run a great many workshops all over the place, from teaching a small desert community about heritage grain in California to making focaccia on a council estate in London. She has been involved with Better Health Bakery, which offers training for adults recovering from mental illness since 2014 and is also head chef on the Designers on Holiday project when she is not running The Bread Companion.
