Argentine chef Martín Milesi has more than two decades experience in the hospitality industry being head the creator of "UNA - One Table Experience" in London, his first pop-restaurant where he created a totally new concept serving just 12 people per service and started within the Victorian gothic splendour of Sir George Gilbert Scott’s recently renovated St Pancras station in central London. At UNA he combined authentic Latin American ingredients, classic recipes from Argentina and innovative techniques to create his distinctive take on his native culinary culture. Since it first began in 2014, UNA has been growing through 'word of mouth', boasting unbeatable reviews from its guests. Now, it is time of his new concept: "Tú", the affordable version of 'UNA', more tables, more people, more dishes. More, more, more. Milesi’s career has also spanned academia, as he was a professor specialising in the History of Argentine Food at the Argentine Institute of Gastronomy (IAG), partnership of L'Ecole LeNotre of Paris and the Argentine Business University (UADE). He spoke at the Argentine Embassy in London to Argentine restaurant owners in London on the influence of Great Britain on the commerce of Argentine meat. Milesi is also a professional illustrator.
