From the former Head Chef of Vanilla Black comes Eleven98: a Hackney-based passion project hosting pop-up "supper club" style dinners at the coolest spots across the London borough of Hackney. I always kick of proceedings with a quirky welcome cocktail and serve bespoke multi-course tasting menus, sometimes with drinks pairings. The truly unique concept of Eleven98 is that I source all of my produce from within the borough of Hackney! This means that everything plant-based will have been literally cultivated or foraged within a mile or two of where you'll be eating it! Lots of the veg and herbs are grown in Aidan's own garden too, and his passion for sustainability and permaculture principles is visible throughout every aspect of the Eleven98 experience. Bread will always be sourdough from artisanal bakeries in the area, eggs from Hackney City Farm, honey from the apiaries of family friends and meat and fish carefully sourced from small, independent Hackney-based businesses.
